Aaaahh Jackfruit!!! I actually made this blog post because a friend who just visited the Philippines gave me a jackfruit as pasalubong (Filipino word that means a little gift for the people who are welcoming you back when you’re coming from a trip.). It reminded me how common this fruit is in tropical countries and so rare here and we don’t always talk about how nourishing it really is. So I thought…. why not write about it?

  • 1 cup ripe jackfruit pods (seeds removed)
  • Juice of 1 fresh lime
  • 1–1½ cups cold coconut water
  • Fresh mint leaves (optional)

Instructions:

  1. Add jackfruit, lime juice, and coconut water to a blender.
  2. Blend until smooth.
  3. Taste and adjust lime or water as needed.
  4. Pour over ice and garnish with fresh mint.

This dish is comforting, nourishing. It’s also a common dish in the Philippines (Ginataang Langka as they call it). Also VEGAN-FRIENDLY!!!

Ingredients:

  • 2 cups unripe jackfruit (fresh or canned, drained and shredded)
  • 1 cup coconut milk
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1 thumb-sized ginger, sliced or minced
  • 1 tbsp coconut oil
  • 1–2 cups vegetable broth or water
  • Salt and pepper to taste

Optional add-ins:

  • Chili or chili flakes
  • spinach
  • string beans
  • A little shrimp paste for added taste

Instructions:

  1. Heat coconut oil in a pan over medium heat.
  2. Sauté onion, garlic, and ginger until fragrant.
  3. Add the jackfruit and stir for a few minutes to coat it with flavor.
  4. Pour in coconut milk and broth. Let it simmer for 15–20 minutes until the jackfruit is tender and absorbs the sauce.
  5. Season with salt and pepper. Add vegetables (spinach, string beans and chili flakes) if using, and simmer for another 5 minutes.
