You and Your Valentine Will Love This Hearty Meal

Been a while since I did a recipe blog! So here it is…

Lately, I’ve been all about heart-healthy meals that are not only nourishing but also delicious! And what better way to show your heart some love—literally and figuratively—than with a dish packed with omega-3s, fiber, and healthy fats?

Enter my Grilled Salmon Salad with Avocado Dressing—a vibrant, nutrient-dense meal that fuels your body while satisfying your taste buds. Plus, with its fresh flavors and elegant presentation, it’s the perfect Valentine’s date meal! 💘 Whether you’re cooking for someone special or treating yourself (because self-love matters too!), this dish is a beautiful way to celebrate love—while keeping your heart happy and healthy.

Ingredients:

For the Salad:

  • 2 salmon fillets (about 4 ounces each)
  • 4 cups mixed greens (spinach, kale, arugula—whatever you love!)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced

For the Avocado Dressing:

  • 1 ripe avocado
  • Juice of 1 lemon
  • 2 tablespoons olive oil
  • 1 tablespoon plain Greek yogurt
  • Salt and pepper to taste

Instructions:

  1. Preheat your grill or grill pan. Season the salmon with salt, pepper, and a squeeze of lemon juice.
  2. Grill the salmon for about 3-4 minutes per side until perfectly cooked. Let it cool slightly.
  3. In a blender, combine the avocado, lemon juice, olive oil, Greek yogurt, salt, and pepper. Blend until smooth and creamy.
  4. Assemble your salad by layering the greens, cherry tomatoes, and cucumber. Top with the grilled salmon and drizzle generously with the avocado dressing.

Why Your Heart (and Your Valentine) Will Love This Meal ❤️

  • Salmon: Packed with omega-3s that support heart health, reduce inflammation, and promote overall wellness.
  • Leafy Greens & Veggies: Rich in fiber, antioxidants, and essential vitamins to keep your body thriving.
  • Avocado Dressing: Creamy, flavorful, and loaded with heart-healthy monounsaturated fats.

This dish is light yet satisfying, bursting with fresh flavors, and just fancy enough to impress your date (or yourself!). Pair it with a glass of red wine—another heart-healthy treat in moderation—and finish off with some antioxidant-rich dark chocolate for dessert. Yum!
